As CBD continues to grow even more popular, it has begun to migrate from our medicine cabinets and nightstands to our pantries, kitchens, and even our bars. CBD recipes and CBD cooking products seem to be everywhere these days.

Our CBDfx Kitchen Classics series has looked at CBD appetisers, CBD cocktails, and CBD recipes for nearly every occasion. But there’s one crucial meal we haven’t covered yet. It’s true, we’ve been holding out on you. 

And so, without further ado, the CBDfx Kitchen Classics installment you’ve been waiting for: CBD desserts! (Yes, I do consider pudding to be its own meal.)

Today, we’ll share recipes for CBD chocolate mousse, CBD lemon icebox pie, and CBD red velvet cupcakes.

While there are tons of exciting CBD cooking products on the market, including baking oils and even flour, we’ve found that one of the easiest and most cost-effective ways to start cooking with CBD is to simply use your own CBD tincture. It allows you to experiment without a major investment, and if you already have CBD oil at home, you don’t even have to purchase anything new. 

Today’s recipes will use our own CBDfx tinctures, and we’ll even talk about their taste so that you can think about how they’ll work in your favourite desserts.

As we’ve said in our other CBD recipe articles, it’s important to understand how CBD works, and how it interacts with other factors, including temperature and alcohol, before we jump right into the recipes. So, let’s start with the CBD kitchen basics!

What Is CBD? 

CBD is short for cannabidiol, which is one of many molecular compounds called cannabinoids that occur naturally in the cannabis plant. Cannabinoids like CBD, CBG, CBN and CBC are not psychoactive, meaning they won’t cause a “high” when you ingest them. Instead, they offer a host of other therapeutic benefits. Our CBD products are derived from the cannabis hemp plant (as opposed to marijuana), so THC levels are very low (less than 0.3%) and non-intoxicating.

How Does CBD Work?

Cannabinoids, like CBD, interact with receptors in our endocannabinoid system. This is a system common to all mammals that is integrated with our central and peripheral nervous systems, as well as other organs and systems throughout the body that regulate digestion, mood, immune response, sleep, and more.

There are two kinds of receptors we talk about in relation to the endocannabinoid system; CB1 and CB2. CB1 receptors are found in the central nervous system and the brain. CB2 receptors are located throughout the peripheral nervous system, as well as our immune system and other organs and tissues.

When a cannabinoid interacts with an endocannabinoid receptor, it imparts a beneficial effect related to where that receptor is located and what it does.

People describe these effects as calming and soothing, and scientists continuously study CBD’s effect on inflammation, anxiety, pain, and more. We don’t make definitive claims about CBD’s role in any chronic or acute conditions, because the studies are ongoing.

What we do know is that people the world over find that CBD helps them with a host of issues.

Can I Cook With CBD?

Short answer: yes! Long answer: yes, and …

The recipes in our CBDfx Kitchen Classics don’t often involve much cooking, at least with the CBD oil. When you heat CBD oil to a certain temperature, it loses its potency. For that reason, we keep our oven temperatures below 180 degrees and often find ways to mix in the CBD oil before or after heat.

One of our dessert recipes today will involve cooking with heat, but we’ll keep that oven to 180 or below.

How Much CBD Oil Should I Cook With?

As for the amount of CBD in any given recipe, we use a simple formula:  

[Number of servings in the recipe] x [the recommended serving of CBD product]

For example, if a recipe makes six servings and the recommended serving of a CBD oil tincture is 1mL of CBD oil, then we will add 6mL of CBD oil to the recipe. 

There’s a caveat to this: everyone’s tolerance to CBD is different. Always factor in the tolerance of everyone who is partaking in the CBD dessert. 

Also, make sure that everyone is sticking to the recommended serving size. If you’re making 16 CBD cupcakes and putting 16 servings of CBD Sleep Oil Tincture into the batter, you should know that if you eat three CBD cupcakes, you’re taking three times the recommended amount. 

Be smart and be mindful of what the tolerance level is for you and anyone else who might be enjoying your CBD treat. Also, make sure you let them know what’s in it before they try it.

CBD Chocolate Mousse

Confession time: chocolate mousse has been my favorite dessert since childhood. So, I may be throwing this recipe in selfishly. But who can resist such smooth, light, chocolatey goodness? Especially with a little dash of CBD?

Makes 2 servings

Ingredients:

259ml heavy cream

2 droppers CBDfx CBD oil

60g chocolate, broken into little pieces (milk or dark, your preference)

40g sugar

60ml hot heavy cream

Garnish of your choice (i.e. raspberries, mint sprigs, Piroulines)

Directions:

  1. Combine your heavy cream, cbd oil, and sugar in a heavy bowl and mix until soft peaks form.
  2. Save two big spoonfuls of this whipped cream for later.
  3. Whisk chocolate and hot cream in a bowl until chocolate melts and the mixture is smooth, then fold it into the whipped cream. Let it get light and fluffy.
  4. Separate into two small serving dishes and chill for at least an hour.
  5. Garnish with the whipped cream you saved and your other garnish choices.

CBD Lemon Icebox Pie

A great treat for hot, late-summer afternoons, and as easy as … pie. This CBD Lemon Icebox Pie makes the most of a timeless recipe for a chill summer treat, in more than one sense of the word.

Makes 8 servings

Ingredients:

Filling

225g softened cream cheese

8 droppers CBDfx CBD oil

1 can sweetened condensed milk

120ml freshly squeezed lemon juice

15ml grated lemon peel

Whipped cream for topping

Crust

130g digestive biscuit (or graham cracker) crumbs

110g brown sugar

90ml melted unsalted butter

Pinch of salt

Directions:

  1. For the crust, mix your crust ingredients, then press them evenly into a 23cm/9˝ pie plate 
  2. Refrigerate crust for at least 1 hour.
  3. Beat all your filling ingredients in a large bowl until smooth.
  4. When crust is refrigerated, spread your filling in evenly.
  5. Refrigerate for 6 hours (or until set)
  6. Top it with whipped cream and enjoy!

CBD Red Velvet Cupcakes

Cupcakes are a fun and easy shareable dessert for informal gatherings. And red velvet elevates this humble CBD dessert into something fit for dinner parties.

Makes 16 servings

Ingredients:

Cupcakes

210g flour

16 droppers CBDfx CBD oil

9.5g cocoa powder

200g granulated sugar

9.5g baking powder

1.2g baking soda

1.2g kosher salt

3.59g unsalted butter

3 eggs 

10ml vanilla extract

180ml buttermilk

Red food colouring

Frosting

680g confectioners sugar (this is not a diet recipe)

450g cream cheese (room temperature)

3 sticks unsalted butter 

5ml vanilla extract

1 pinch kosher salt

Directions:

  1. Preheat that oven to 180 degrees
  2. Put cupcake liners in your cupcake pan
  3. Sift the cupcake dry ingredients, including sugar, in a large bowl and whisk together
  4. Whisk cupcake wet ingredients (including CBD oil) in another large bowl until combined
  5. Mix wet and dry ingredients together
  6. Add red food colouring to get the perfect red velvet tint. Go slow!
  7. Distribute into your cupcake pan
  8. Bake 15–20 minutes
  9. Frosting time! Cream your butter by softening it and mixing until it’s light and fluffy
  10.  Add cream cheese, vanilla and salt to butter. Beat.
  11. Sift confectioners sugar into a bowl, then add it in cups and mix until it’s all combined.
  12. Top your cupcakes with it!
